It’s so important to be eating enough food, and enough of the foods that are going to make your body feel good, especially with social lives and school work, cabin fever and jobs. The beautiful thing about cooking is that it can be entirely experimental and fun. It’s good to know that you put love and thought into the foods you consume.

On Feb. 3, Northern Lights Dining (NLD) served “vegan” chicken parmesan at Parsnip which was not labeled as containing milk when real mozzarella cheese was used. As someone recently diagnosed with a food-bourn allergy, I was concerned after I heard this.
EATING GREEN - Parsnip at Northern Lights Dining Hall offers vegetarian and vegan options, such as tofu burgers and snap peas. The Peas On Earth Challenge encouraged students to eat vegetarian and vegan to benefit the environment and their own health.
